Bubble and Squeak with Leeks!
What you'll need:

First, peel and chop potatoes to make mashed potatoes.
Then mince and sautee 1/2 yellow onion, 1 clove garlic
and about a handful baby leeks.

Once the mashed potatoes are done,
(mash them about 75% so they still have form to them,)
stir in the sautee mixture into the potatoes.

Form several patties from the potato mixture and panfry
until they are golden brown on all sides.

Yum, they look nice. Is there a few diff recipes for this cause I've seen it done as a sloppy throwin on toast? Aussies do tend to murder old traditional recipes..

Your step-dad, I'm sure, would be having a stroke if he was reading this because it is nothing like his version of bubble and squeak. Where's the cabbage? Where's the bacon? However, it looks pretty yummy to me!
I've never heard of this "bubble and squeak" but once again, I like your recipe. You make things look easy AND tasty. I still remember your potato smashes.

What you made is a lot like potato latkes. We have an order of Polish nuns down the street that have an annual carnival and this is one of the main reasons I go (kielbasa being the other). They look great, did you fry them in butter or cooking oil? And you went with the smaller (I guess milder) leeks too. Bet they were good.

I've had the very Zeussical green mashed potatoes before .... but I have never seen this leeky bubbles and squeak. Sounds like a most excellent recipe because it would be a good accompaniment with so many entrees. Are they better in the final step in non-stick or classic cast iron?

Mom: I didn’t see a recipe to add bacon! I love bacon! I didn’t use cabbage because the challenge was leeks! I venture out to new things now. Like the cranberry chutney!

Buzz: I looked high and low for the baby leeks. And I don’t think they are as strong on the flavor. I know you’re a fan of the butter, but I just used some extra virgin olive oil. And, I bet I’d love that annual carnival.
Fishy: Give em a try! I just used a non-stick pan, but I bet the iron skillet would give them that extra irresistible flavor. Mmmm.

Wow, these look neat! They could be a dinner or a side. Add Buzz Kill's Kielbasa and some sautéed Brussels sprouts on the side (to get the cabbage flavor for your mum) and oh boy what a meal.
